Z, By the way I enjoyed quisidilles or however you spell it at bike night. The ones with red peppers and cheese, very good. My first time to a Quaker Steak and Lube. Haha. LOUD, I would like to see Mt. Rushmore as I've never been there and have only seen the pictures carved in there. Good idea, Miss Bee. I surely hope they find somewhere to carve in our pics, too. After all it would be a very unique picture, right. What do you think Inspector? Anyone ready for a cold drink from the sidecar? 🙂

Ah... Tumbles, you have hit upon a favorite dish of mine as well - LOVE quesedillas - and here is the funny part of it all - of course they are beyond simple to make! But, even funnier - my husband LOVES mine!

He will order them occasionally if we go out to eat. Then, he bites into them and says "no where as good as yours!" I keep telling him "honey, it is just tortillas and cheese" - although I often put some beef or chicken in mine - and he always says "but, you always add your special UMPH to them!"

Sweet man... but, they really are just tortillas and cheese!

However, if you would like to know how to make them, they are soooooo easy - the Mexican equivilant to a grilled cheese!

Meanwhile...

The Fabulous Friends are roaring down the highway on their way to Mount Rushmore. We are all enjoying our snacks that Tumbles and Little Bee are serving us. We have found a wonderful little area to have a picnic, and as always, we are spending out time enjoying each others company and visiting. Laughing loudly as The Inspector and LOUD recall their tall tales of their travels. Little Bee looks up at Tumbles and whispers "did they really do ALL of that?" Tumbles... winks at her cute little gal pal and says "of course honey, they are both indeed legends in their own minds!"

Meanwhile, the Friends all notice the nice shade tree with the large blanket Zinnie has laid out for all of us to take a nice nap before hopping back on our bikes.

Z, Glad to see you posting and back home again. Fabulous Friend. I'm sure I'd like your quesedilla recipe as I still haven't tried to make tortillas. That was my first time trying them last week. Think I told you those were with cheese and red peppers, served with lettuce, salsa and sour cream on the side. I was hoping to ask my son to bring me an order when they go sometime, but everything is better served fresh. Making them myself would be great. Hi to all the rest of you, Fabulous Friends. As always thanks for the thoughts - always appreciated.

I'm glad to hear that you had a good time at the reunion Tumbles.

Quesadillas - you can use store brand tortillas.

What I do is use a mixture of Monterrey Jack, cheddar and asiago cheese's. If you like, you can also find the "Mexican Blend" by Kraft in the preshredded section - that has the four cheese's blended together and pre-shredded which makes it faster and easier.

I melt a bit of butter in a frying pan - place the tortilla in the pan, and spread the cheese out on the tortilla. Now you can also put beans, or meat, pico in there too if you like. Truth be told? I love the plain cheese (comfort food from childhood?) - then fold the tortilla over. I cover the pan, and brown for a minute or two, then flip - I usually add a bit more butter as it is cooking as I like the tortilla's really crispy and brown - which is also what my husband loves about them. I think perhaps that is the secret as he always says that the ones he get's in restaurants are "dry" - so perhaps it is the little bit of extra butter?

Anyway - I hope if you try them that you enjoy them as much as we do.

She then shouts out (by the way Bev, here in our story, we have talking dogs, and kangaroos!) - "Come on Bev, we are all on our way to Mount Rushmore!"

The Tumblin' Gal looks over at LOUD and winks! Something the little red LOUD dog can NEVER resist!

Oh, so you tried making them? I certainly hope you enjoyed them. Don't forget you can always add (or not!) whatever garnish you like. Lettuce, tomatos, sour cream, salsa, whatever!

Yes, I liked them but forgot the salsa and sour cream which I have here so next time. And I didn't have those kinds of cheeses on hand so used mozarella, but okay for me as I didn't know any better. Haha. Hope you're feeling better each day, Z.

Hey Mozarella is fine too! Any kind of cheese is really O.K.! I'm so glad you enjoyed them, especially as they are so easy to make.

Yes, I'm beginning to feel better each day, and I'm doing some work at home to keep my mind busy too.

Also... just heard from my youngest son, and they have just found out his wife is expecting a baby. This will be his first, although she has a child from a previous relationship which he formally adopted. They are very happy and very excited.

Hi Tumbles,

Well...let's see - thirteen right now, so this will make fourteen!

Lisa? Is doing BEAUTIFULLY! Her wonderful husband (remember he is a Dr., so tht helped) hired her nursing care 24/7, and they completely redid one of the guest rooms with a hospital bed - so she is now home! She has about six more weeks to recover with the back cast on - then she will begin her rehab. She is already doing some things with her legs, but, since she is now home she is just so much happier.

Thank you for remembering me Tumbles, you mean alot!

I wish we could share some pictures - I have some great ones from the baptism that my Dad just sent me.

OH well, will you at least believe me when I tell you everyone looked happy?

Wow, You have quite a family when everyone gets together sounds like. I'm glad to hear Lisa is able to be home now and I hope she keeps getting better. So glad her husband is able to get her care like that right at home. I'm sure that in itself is helping her recovery a lot. I forgot you would probably have pictures of the baptism so thats good. Next best to being there, anyway. Take care, okay. I'm glad we're friends on here at least. I opened my thread about something I was dealing with, family again and there is more to it than I posted, but hopefully their actions will not affect me financially. I've ordered a credit report to hopefully see that nothing has been put in my name. I can't even get credit since I'm paying bills off and won't be able to after they're paid so don't want anything worse than that to happen. Love, TW

Ty, Z. I'm glad Miss Bee is keeping you company, hopefully quietly. Glad to see The Inspector is out traveling again. Hope he's having a good time and being pampered and all. I wonder if LOUD misses him or is happy to have less competition around for attention. I bet they will be all excited when he gets back though. Take care, okay, Z.
